RECIPE: Roasted Sweet Potato, Cauliflower & Garlic Soup

Providing nutritious food to the vulnerable and needy is at Second Harvest’s core. This month’s recipe comes from Sistering, an incredible multi-service agency who supports women in Toronto who are at risk, socially isolated, homeless or precariously housed. We hope you enjoy this nutritious meal which serves six; it’s a simple recipe which will nourish bodies and warm hearts.

INGREDIENTS

Seasoning Blend:
1 tsp ground thyme, 1 tsp salt, 1 tsp paprika, 1 tsp garlic powder, 1 tsp chili powder

Soup:
1 medium sweet potato, peeled and diced
1/2 head cauliflower, separate into florets
12 cloves garlic, halved lengthwise
4 tbsp olive oil
1 large onion, large dice
1 large carrot, large dice
2 stalks celery, large dice
1/2 tsp black pepper, ground
2 L vegetable stock
Salt and pepper to taste
1 bunch chives, chopped

PREPARATION

  1. Preheat oven to 400°F.
  2. In a small bowl, prepare seasoning blend by stirring together thyme, salt, paprika, garlic powder, and chili powder.
  3. In a large bowl, toss sweet potato, cauliflower and garlic with 2 tablespoons of the olive oil and half of the seasoning blend.
  4. Spread onto a baking sheet and roast until very tender and slightly caramelized, about 25 minutes.
  5. In a medium pot, sauté onions, carrots, and celery with remaining oil over medium heat. Cook until slightly caramelized.
  6. Stir in remaining seasoning blend and black pepper. Warm until aromatic, about 1 minute.
  7. Add roasted vegetables to pot. Bring to a simmer and cook until vegetables are  very tender, about 10 minutes.
  8. Remove pot from heat and cool. In batches, puree the soup in a blender.
  9. Bring soup to a simmer once again over medium heat, and season with salt and pepper to taste. Add chives and serve hot.
